There’s a very large Cambodian community in the city of Long Beach south of Los Angeles. We went to one of the small restaurants there and because the menu was all in Khmer, we ordered a few random dishes that looked good.
One of them was a salad that had amazing flavors and a varied, rustic texture. A bit of salty, a bit of sweet, sour, and spicy all blended together. To this day we don’t know what the dish is properly called.
We just call it our Tropical Pork Salad!
